As the weather gets chilly, I'm keep seeking for warm and cozy things.
So today, I'm going to make a cozy, sweet and dreamy looking cake.
Do you guys remember the Lovely Girlish Baby Choux (Cream Puffs) I've made before? I really liked how the name matched the look of those cream puffs.
The cake I've prepared today is "Lovely Girlish Cake".
Then let's start today's fun and creative baking! Zoom!
Today's ingredients!
I want to make a cake that looks like a sweet dream of a naïve girl.
So, I've prepared ingredients to make moist, soft sheet cakes and light yet creamy buttercream.
First, the ingredients for genoise!
63g of cake flour or all-purpose flour
150g of eggs, 80g of sugar, 11g of milk at room temperature
7g of unsalted butter at room temperature, 7g of honey,
Suitable amount of buttercream
And the buttercream I've made in advance!
The buttercreams I've made for previous cakes were close to American style.
Today, mmm~ I will make the buttercream in Korean style. Hehe. Which means this buttercream is made with different recipe! Hehe
If you prefer sweet and strong buttery taste, follow the American buttercream recipe,
But if you prefer creamy yet lighter taste, then you can make with Italian buttercream recipe.
Prepare the colors of food colorings you like.
The cake pan which will be used for today's genoise.
A whisk or hand mixer, A spatula, sifter, mixing bowl
Then let's start!
Step 1 – Making the genoise batter
First, beat the eggs at room temperature, and gently mix in sugar.
Place the mixing bowl on a saucepan filled with water. Whisk slowly until the temperature reaches around 40~45 degrees and remove it from heat.
After removing from the heat, mix on high speed. You will see the bubbles getting smaller and a creamier texture.
When you get a thick creamy-like texture, try dripping few drops of batter. If the shape is kept for 7 seconds, then the batter is ready.
Now mix on low speed to remove all the fine bubbles. Don't forget this step.
Now sift the baking flour in, and mix with a spatula until you can't see the powdery form of the flour.
Lastly, mix the melted milk and butter and pour the batter right into the pan.
Hit the baking pan to remove the bubbles and put it in the preheated oven.
Step 2 - Baking
Preheat at 190 degrees for 20 minutes / Bake at 175 degrees for 20 minutes
Tada~ It got baked really well!
I love how it looks. Let's leave it to cool down.
Step 3 – Sandwiching and icing sheet cakes
I baked one more genoise, as I'm going to use total 3 sliced sheet cakes.
Now it's time to sandwich the sheets and icing. I've put bunch of buttercreams in between the sheets.
You don't need to ice the cake neatly. Just cover with thin layer to cover the genoise and freeze it in the oven for 15 minutes.
Now I will add sweet pastel colors to the buttercream. Mint, pink, and yellow. Aren't they sweet looking colors? Hehe
Take out the frozen cake, and dab buttercreams on with back of the spoon on the cake.
Now trim the sides and top neatly.
Pipe small dots as a border with the leftover cream :).
Only our favorite decoration time is left now.
To express a dream of a girl, I prepared all sorts of decoration ingredients.
Cotton candies! Cotton candy gives a instant, dreamy feel to desserts, which is totally my style. And I prepared some meringue cookies and all sorts of edible sprinkles!
Now I will decorate using each ingredients~
Tada~~ Lovely Girlish Cake is completed!
Isn't this amazing and pretty? It really looks sweet~
One flaw would be that cotton cadies are sensitive to temperature and humidity so they melt pretty quickly. But I really wanted to make a dessert with cotton candies.
As I place these meringue cookies on top of the cotton candies, it seems the girl wanted to eat meringue cookies so much that they came out in her dream. Meringue cookies are flying inside of her dream…lol
I was joking. I just wanted to give more of a lovely feel with meringue cookie. Hehe
Soft cake sheet and light buttercream like a naïve and lovely girl, with a pastel decoration which resembles a sweet dream of a girl.

Mm~~ I really liked the rich, sweet taste of buttercream, but this one is really one of the best as well!
I want to keep eating this. It's not too sweet, and goes well with the genoise.
It feels as if my body and mind feel lighter~
