These devilled chicken wings are the perfect halloween themed appetiser.
Sticky and sweet but they also carry quite a kick.
Serve with a ranch dipping sauce to cool them down.
Start with about 10 chicken wings, or double or triple the recipe to make a larger batch.
These make a great appetizer or finger food but you can also serve them with some veggies
and potatoes to make a proper meal.
Remove from the packaging and blot dry with a paper towel, removing any moisture helps
the chicken wings to evenly brown and crisp up in the oven.
Transfer the wings to a bowl and set to the side.

The most important thing with chicken wings is packing them full of flavour.
These wings are coated in a dry rub full of spices before baking as well as coated in
a sticky sweet sauce straight out of the oven.
Start by making the dry rub.
In a small bowl measure out 2 teaspoon of brown sugar.
As the chicken wings bake the brown sugar caramelises and creates the most perfect flavour.
Next is 2 teaspoons of baking powder.
We're not baking a cake here but the acid in the baking powder actually helps the wings
become golden brown and crispy.
Next time you're making wings, no matter the flavour add a few teaspoons of baking
powder and you'll get a much better result.
Make sure not to mix up baking soda for baking powder here though as that will leave a terrible
bitter taste.
The spices we're using are cumin, paprika, and garlic powder, a teaspoon of each.
As these are devilled wings I'm also adding a generous amount of chilli powder.
Use between and quarter teaspoon and teaspoon depending on how much you like the heat or
if your not a fan just omit it completely.
Finally season with salt and pepper.
These wings are a perfect halloween themed appetizer but they are also great any other
time of year.

Use a spoon to mix the dry rub together until all the ingredients are well combined and
there are no longer any lumps.
Pour the dry rub over the chicken wings, you may not need all of it and toss until well
coated.
If you have any left over rub you can store it in an airtight container for a few weeks.
It's great on chicken or works really well mixed into chilli or minced beef for tacos.
Lay the chicken wings out on a rack on top of a baking sheet.
I like baking them this way instead of straight on a baking sheet as the heat can get the
whole way around the chicken meaning you don't need to flip them.
Make sure to give the rack a quick spray so the chicken doesn't stick while baking.
Place the wings into a 200 degree Celsius or 400 degree Fahrenheit oven for 40-50 minutes
or until the wings are cooked through and well browned.
Check them in the last ten minutes to make sure they aren't burning.
When the wings are about 5-10 minutes away from being ready start to make the sticky
sauce.
3 ingredients, you're favourite hot sauce, honey, and a small amount of butter.
In a small saucepan measure out a third of a cup of hot sauce, alternatively if you don't
want these wings to be too hot go for a more milder sauce or use a little less sauce.
Pour into the saucepan followed by a couple of tablespoons of honey for sweetness and
a couple of tablespoons of butter to give the sauce the glossy shine.
Place the saucepan over medium heat and stir occasionally until the honey and butter have
melted in.
Turn the heat to low and simmer for about 5 minutes until the sauce has thickened.
When the wings are cooked remove them from the oven.
Use tongs to transfer all of the wings into a large clean bowl.
Pour over the hot sauce and toss the wings to coat generously.
Serve the wings with a dipping sauce, I like to go for ranch as it cools the spice down
a little.
These wings are crispy and sweet, but also carry quite a quick.
