4 ways to cover a cake in buttercream perfectly? - Duration: 10:15.Welcome to How To CookThat, i'm Ann Reardon (s) and today we're experimenting with four different ways
of covering a cake with buttercream and I'm using this weird contraption and
I've gone the traditional scraper and turntable method for mine with a bit of
a twist and I'm experimenting with a slightly different style I've never seen
this before I just thought I'd experiment with a different method to
see if I could make one that was easier for kids and I'm using two of these. Let
me know in the comments below which method you thought was the easiest and
the best and which ones you've tried before or if you've got another way that
you do it let me know in the comments. So for all the cakes I'm starting with
vanilla cake and covering that in Jam and then a layer of vanilla buttercream
and then add a chocolate cake on top of that and continue to stack it up so
you've got four layers of cake. Then we obviously want to cover the outside with
buttercream that's what we're here for and if you use a piping bag with a big
flat nozzle that's probably the fastest way to get better cream on the outside
of the cake but you can just use a spatula to spread it on instead if you
don't have one of these. Getting a cake perfectly covered in buttercream with
nice straight sides is the starting point for most decorated round cakes
whether you're going to cover it in fondant or put other decorations on it
this is a key skill you need to be able to do. For the traditional method of
doing it you want to start by flattening out the top using an offset spatula to
try and make it perfectly smooth and flat. Then for the sides you just use a
scraper and rest the bottom of it flat on a turntable and turn your cake as you
scrape away the sides. Now if I put this in fast forward or skip a bit of footage
it looks like this is really quick but it does actually take a little while to
get it looking good. If you have any gaps just add extra to that part of the
scraper and go around again ... I'd say you should allow yourself at least ten
minutes to do this really neatly especially if you're new at it, it might
even take you 15 minutes just give yourself time to get it perfectly smooth and neat.
Obviously if you're decorating round cakes all day
every day then probably you could do this a lot faster than that but I'm
assuming that most people are not doing that. Now one common mistake lots of
people make with this method is they lean their scraper in as they're going ...
now if you get a lean it in your sides are not going to be straight. You can get
a fondant smoother that has a flat bottom and you can use that to hold it
up against the side of the cake and check if yours is straight. Unfortunately
these are not ideal for smoothing out buttercream because they don't have that
sharp edge so I'll show you you can see it's just dragging along the buttercream.
You could use this for the initial sort of shaping to make sure you've got it
sort of straight and then use your scraper to smooth it over once you've
got it straight on the edges first if you want to do that. The other thing you
can do that would really help with this process is add a round cake board to the
base of your cake and that just helps guide your scraper and makes it easier
to move your cake off the turntable later but if you don't have a turntable
and you don't have a cake board you can just use a flat plate or even a piece of
baking paper on the counter and spin it by hand but it's a bit slower and it's a
bit harder to get it straight and smooth. Once your sides are straight use a
spatula to push in any little bits that are sticking up on the top edge in
towards the middle. Method number two is using two perspex cake boards and one
sits on the top and the other one sits on the bottom. Now this one is too big
for this cake which will make it harder to get smooth sides but it also
highlights a major disadvantage of this method ... you're going to need to buy these
for every size of cake that you could be making. The reason they're perspex
instead of the covered card cake bases is because those ones tend to
have little bumps around the edge so you're not going to get it nice and
smooth. You can get really thin smooth cardboard ones but they're obviously not
very strong. I think that if I put perspex straight on top I'm not going to
be able to get it off again so I'm going to start by flattening the top and
adding a circle of baking paper and then my perspex
on top of that. Now for the fun part spin it around ... now having this one on
top means that you can't lean in with the scraper so assuming you have them
directly lined up on top of each other the cake should have straight sides. I'm
not sure if you can see what's happening here on the camera think you can but as
I scrape the sides and turn it around you can see I'm getting a gap at the top
underneath the perspex. So let's see if we can add some more
buttercream to fix that, just take off the baking paper add some more in and
put the baking paper and the perspex back on top and smooth it round again. But
look it's happening again now this may be because my buttercream is so thick
around my cake because the circles are too big for my cake. This method is
definitely quicker than it was without the two circles and after it's been in
the fridge you can see it looks put around the sides but as we already
pointed out the top is not flat. So let's try it without the baking paper and see
if we can get the perspex off after it's been chilled. I've seen people do it this
way with ganache but buttercream is a lot softer okay. OK, one hour later let's see
if we can get this off the top just run the spatula along underneath the perspex
circle and I can tell this is not going to work look the buttercream is just
getting ruined ... that is a bit of a mess! Well with this method the sides look
great and if you use baking paper under your circle you can just touch up the
top once it's chilled. Okay method number three involves using
a container with straight sides. Unfortunately my container is a little
convex at the base so I'm going to need to put a cake board at the bottom to
flatten that out and on that I'm gonna put a circle of baking paper so it
doesn't stick and around the edges I'm going to use some acetate. So to start
with line the base and the sides just at the bottom with icing and use a
spatula to spread that out, now if you use a clear container you can look at
the sides and check that there are no air pockets and you can see here there
are some lines there so just use your spatula to smooth those
out and then add in your first layer of cake. I've had to trim these cakes a
little bit smaller to make them fit so again you're going to need the right
size container for the cake that you are making. Add some buttercream between your
layers and then spread the blue frosting a little higher on the sides and add in
the next layer of cake and you'll notice I'm using Jam on the underside of the
cake instead of the top that just makes it easier to add it in without getting
jam all over your hands and you just want to keep going like that until
you've added all your layers of cake and then cover the top in a thin layer of
buttercream. Now this will actually be the bottom not the top so don't worry if
it's not perfect but because we're going to put it in a freezer you want to cover
it so that the cake doesn't dry out. And once it's been chilled for a couple of
hours you can then tip it out and remove the acetate and then peel off the baking
paper from the top. Now you can see I have a little gap there so I'll just
fill that in and because the frosting around the edge is frozen it's quite
easy to fix any problems without ruining the rest of it. The same goes for the
edges you can see they're not a hundred percent smooth because we've peeled off
the acetate but if you just run a scraper around the edge they smooth up quite
easily. This method it's pretty easy the only drawback I found is because we
froze it upside down the weight of the cake had settled that way and then we
flipped it the right way up so after about an hour we had a slight bulge at
the bottom of the buttercream but you could easily prevent that by before
you freezing it with the container still on flipping it on to a plate and
then freezing it that way with the container and everything still on it and
just follow the same method after that. The final method involves using a ring
and a circle that goes inside it ... it says to place it flat onto some baking paper
and fill the ring with frosting then use a spatula to remove any excess so that
you end up with like a disk of frosting and then place that into the freezer.
Once it's frozen it says to run a hot knife around the edge and remove the
ring and then stack the cakes on top of that so this will become the top
of the cake we're flipping it upside down like we did with the other one and
then put your circle on top ...this will be the base of our cake ... and cover the edges
in buttercream. Now with what the same problem is we had before the cakes are
too small for the size of the ring so you need to buy several of these if you
have different sizes of cakes but we'll give it a go anyway we're going to end
up with a big layer of buttercream. Then it says to run the scraper round the
edge now I'm a bit confused at this point as to what the purpose of freezing
the first rim was because we're now scraping away anyway it's got extra
buttercream on it from when we put it on the sides and it's not really having any
purpose we might as well have just put buttercream on the bottom and put our
cakes down and put a cake circle on top. Anyway it says to refrigerate it and
then once it's chilled we need to flip the whole thing upside down and peel off
the baking paper. Now that gives a nice flat edge to it and I like the edge but
I don't really see the purpose of having the ring just use one perspex circle. Let

It was one of the best moments of my life.
This was in Jakarta at the orphanage we were at and then suddenly, your 'son'...

That's a really special experience.
We were married and it took a long time for us to have children, so we...
decided to adopt.
Two years later, we also adopted a girl because we wanted to make our family complete.
Sometimes people wonder whether adoption is good or bad for a child.
I can't make judgements about that, but in my opinion, I have a good life.
I've had and done everything I need in my life.
I've tried all kinds of sports;
football, tennis, golf.
I love life and eating out.
I go on holiday and in the end I also took the right study course.
For a long time, I didn't feel the need to meet my biological parents.
At a certain point, however, I felt that I really wanted to.
I knew my biological father was very ill.
That's the main reason, because each day could have been his last.
My biological father was lying on his sick bed, which I already knew.
But it was a terrible thing to see.
But then you see your real father getting to know your biological father.
It was really weird, I can't describe it.
It made a great impression on me.
Luckily, I can help my nephew financially with what he needs.
I pay for his education and told him to learn English so we could communicate.
I stay in contact with the whole family through him.
It really made an impression.
When I got back to the Netherlands after the trip, I felt very emotional.
An indescribable feeling.
So I went to Efteling straight away.
Baron 1898 had just opened and I had to get rid of all my emotions on it.

A nice anecdote in Efteling, I was really hungry and when I'm hungry I get cranky.
Once, I got my pancake but no cutlery,
so they brought me a huge knife and fork.
When I saw them, I burst out laughing and forgot about being hungry.
All of a sudden, I was happy.
They know how to do that very well at Efteling, put a smile on your face.
A day out at Efteling isn't a success unless I've eaten at Efteling.
We're at Polle's Keuken restaurant now, having a tasty pancake, but there are also other delicious ...
restaurants where I go to to eat,
like Raveleijn, the Witte Paard or Baron 1898 for a healthy snack.

We're here at the Pinocchio fairytale, the most recent fairytale added to Efteling.
A really beautiful, detailed fairytale.
You can see so many details when you look inside.
I have a season ticket and visit the park at least twice a month, and I always go to see Pinocchio.
The nicest thing about the Pinocchio fairytale is that it reminds me of my own story.
When I was a child, I lived life to the fullest, and I still do.
As a child, I looked for adventure and I do the same now.
The nicest thing about the fairytale is that Geppetto really wants a son and, of course, I compare that to...
my father, who also really wanted a son.
That's what I like about the story.
In my time, things were different than they are now.
There was a playground, a rowing pond, I think, and the fairytale forest, but it wasn't as big as it is now.
I really like this attraction.
When I brought Jerik here for the first time, I remember it well.
He was still little and I pushed him through the park in one of those pushchairs.
Wherever something moved or you could hear music it attracted his attention.
He's now a very enthusiastic Efteling Fan.
He talks about Efteling a lot, about the music.
If anything new is added, he says: "Dad, there's something new", as he goes...
more often, of course, "we should go and see it together".
Then I say: "Yes, okay, son. I really like that!
This is my favourite fairytale, the Indian Water Lilies.
When I was five, my parents took me to this fairytale.
I was immediately intrigued by the beautiful scene in which the witch appears and then the frogs...
that play the African beat, then the water lilies open up and the little Elves come out...
and finally the geese.
That completes the picture for me, but it's the music that really makes it.
I'm playing music now, it's also one of my hobbies.
I started when I was twelve years old.
I like getting people enthusiastic getting them to dance.
I always use Efteling music, the Indian Water Lilies.
It's great that people dance to it.
It's also one of my passions.
I have a busy, hectic life, but Efteling always relaxes me.

whole mocha (banana blossom) 550g weight after cleaning 300–350g
potato 100g
dried red chillies 2 pcs; clove 1 pc; cardamom 1 pc; cinnamon 1 pc; cumin seeds ¼ tsp
grated coconut 20g; green chillies 4 pcs
ginger paste 20g
cumin powder 2g; red chilli powder ¼ tsp; total turmeric 1 tsp
sugar 18g; total salt 20g
bengali garam masala ¼ tsp; ghee 8g
small prawns (cleaned and deveined) 75g; soaked chhola (whole Bengal gram) 25g; dal'er bora 30g (recipe in description)
remove outer bracts and collect the flower clusters
repeat for each layer
discard
keep
the inner layers are packed tight and more difficult to peel, but keep going
stop when the bracts are really difficult to peel, and flowers become tiny
keep
let's clean!
pluck a floret
WHAT TO DISCARD: pistil thick stalk with sticky, bulbous head
calyx scaly, transluscent covering
oil your hands to prevent them from getting sticky
discard
keep
the inner florets will be tighter and difficult to clean; do your best
protect your blade! oiling the knife makes it easier to clean off the sticky sap
chop evenly, 5mm apart
don't forget to reapply oil to your knife
discard
halve
slice lengthwise
chop evenly
transfer to a pressure cooker
all our measurements are for 330g edible mocha; calculate other quantities according to your final yield
boil with 10g salt, ½ tsp turmeric
650g water
pressure cook: medium heat, one whistle
let pressure release naturally
allow to strain and cool (30 minutes)
mash boiled mocha lightly (not too much) to get a good mix of mushy and crunchy textures
cut potato in 2cm cubes
coat prawns with a pinch of salt and turmeric
25g mustard oil
fry prawns on medium heat (1 minute)
set aside
temper with dried red chillies bay leaves
cardamom, cinnamon, clove, cumin seeds

cook chhola with the spices (3 minutes)

cover and cook on low heat (6 minutes)
2 more slit green chillies
cook for just 3–4 minutes after adding dal'er bora; if you add them too early, they will go soggy and break; too late, they will remain dry and won't absorb spices
fried prawns
SECRET TIP: if it's too dry, you can add 2 tbsp of milk
keep cooking on low heat (3 minutes)

We chose to come to the France Show to introduce the high school. I am the head teacher of Le Cluzeau high school, in Sigoulès very near Bergerac in Dordogne… near Bergerac Airport.
We are a high school… a state high school, designated as "under contract" in France.
So we prepare for French diplomas with the objective of enabling as much as possible the integration of the pupils who join us, the English speaking pupils who join us so that they can learn in French, but at the same time, prepare at the same time the Cambridge diplomas.
This enables them to prepare the IGCSE or the A Levels for those who can, for those who want to. So there is a selection at the beginning.
So there is a selection at the beginning. This dual objective - both specialising them (the pupils) with the Cambridge diplomas and integrating them in the French system by teaching them the French language and by preparing the French state diplomas.
Ok. So, I have a question Sophie. Do you have teachers who are also English to prepare these people to the GCSE or A Levels?
Is it only with French or English teachers? What types of nationalities do you have among the teachers?
So, it is a mixture. To prepare for the Cambridge diplomas, we have native speaker teachers but who have a national diploma in France.
But then, there are also some French teachers who are accredited by Cambridge University to teach Cambridge courses.
OK, very good. How many pupils are there in your... Le Cluzeau Collège-Lycée post-bac formation continue, so Le Cluzeau?
650 pupils, from the « 6e » who are 10 years old up to pupils who are 18 to 20 years old, or more since we also provide vocational training… With the school's defining characteristic being that half the students are boarders.
The boarding school is an essential feature of the school. We provide support for the pupils all week long, with lots of sport, football, basketball, rugby, MTB or cross-country, to enable the children to flourish.
So, just a reminder, this is not a private school, it is a state school.
It is a school under contract with the State, it is a state school, indeed. There you are. Only the buildings are private, we are an association with regards to this aspect, but we are a state school.

Atmospheres 2018: Gobaith & In Presence - Duration: 2:04.So the name of my piece is 'Gobaith' which means hope.
And then it's all based on the saying 'not all those who wander are lost', so that's
kind of the theme throughout.
Well I've looked at different genres, so obviously classical, popular music. I did
a popular music degree, so I've got sort of jazz influences as well.
So different composers, I've got sort of impressionist and jazz style, so I've got
Debussy, Einaudi sort of influences, and then more modern Jazz songs.
So it's kind of a combination.
That's why I enjoyed this so much because I could actually put my sort of, I don't
know my style on it and join them all together.
The last few years I've known what kind of music it is I'm trying to write, it's
a very specific thing I've been after.
It's called 'In Presence' because I like to try and create sort of timelessness and slow-moving
textures, you just gradually evolve to different places over time.
Eventually it takes you to a completely new place but very gradually and very subtly.
It's got 8 flutes and then about 10 string players and then its piano and pre-recorded
electronics.
It doesn't come across as sort of you hear any pulse or meter, you just have little fragments of
things that are sort of, make sort of a tapestry-like thing.
It creates this just sort of wash of texture and stuff like that so.
Mine's sort of similar in a way. I kind of
The aim is to take the audience on an audible journey.
So I begin with a soundscape.
Then it leads into a piano solo, then a string quartet is introduces, then a wind quartet
and the finale is a big band, well a big small band, so we've got the rhythm section
aswell, vocal, strings, piano everyone is involved.
As you'll see over the weekend, there's so many different styles and genres, we're
all so different aren't we.

If possible,
I try to do this everyday.
However, I haven't been able to do this as often, while I had busy media schedules
I've been regularly exercising since I was little
I have since I was young,
and these are the routines I've been doing ever since, and I'd like to share them today.
First,
I'm gonna tie my hair.
(So it doesn't get in my way)
I've got a haircut so that so the excess hair flows naturally,
even after tying my hair looks pretty.
To be honest, I really don't need to tie it so nice...

My neck and shoulders are really tense,

So, starting now the actual workout begins
I'm gonna start with "Hip-up" exercise while getting down on my hands and knees.
Round your spine upwards, then come back to neutral position
While maintaining that position,
then kick your legs up.
Now for the other leg,
Exhale.
It's not over yet.
This is for the side of hips.
Make sure to maintain 90 degree angle
Lift it up like so
Backwards and upwards!
The opposite leg
It's been a while since I've done this, so it's pretty hard.
It's far from over.
The next one is
the squatting routine that Victoria's Secret models do...
Not, squatting, when they do hip-up exercise
once you fold it close to your chest,
kick your leg up inwards and backwards, then outwards.
This exercise not only works out the side of hip with the moving leg,
but also the other side that is anchoring the body.
That's the hip workout.
Coming up next,
is something that I learned in high school for muscle strength training.
When you do these types of exercise
You don't particularly focus on a part of body such as hips like just now.
It doesn't focus on aesthetics,
but on pure strength of your muscles.
Out of those exercises,
there are a couple really good ones that are great for developing toned muscles
(Adjusting volume)
Continuing on, I learned these when I was cheer-leading
I'm gonna try to do a couple of those.
To begin with,
This exercise strengthens not only your hips, but also your abs, and your arms.
and helps you maintain balance.
It helps you with your core too.
I will demonstrate.

It's pretty similar to the last one
but this time, raise up your leg straight without pointing upwards to the ceiling.
From this position,
lift up your right arm (opposite-side arm from the leg lifted)
lift them up in a straight line
I will do 20 reps per set alternating both sides.
Make a fist when you're pulling your arm in,
at the same time, tighten your core, and maintain your balance
then lift in a straight line
your eyes should be facing the floor
make sure your head is aligned with your spine. not up or down.
The same thing goes to your shoulders too,
neither this, this, or this is acceptable.
Make sure your head, shoulders, arms, and legs are aligned with your spine.
That'd make you less tiring.
Hold!
Alternating limbs.
If you hold suddenly, you might lose your balance.
How are we doing?

Lie on your back,
and lift up your hips.
This is a pretty popular one, isn't it?
You can either cross your legs
or lift up one of them.

I like it and do it to this day.
Since there is no mat on the floor, so it might be a little bit more difficult,
bring your legs (right, left, both)
closer to your upper body, like so... that's 1 rep.

Atmospheres 2018: Gobaith & In Presence - Duration: 2:04.So the name of my piece is 'Gobaith' which means hope.
And then it's all based on the saying 'not all those who wander are lost', so that's
kind of the theme throughout.
Well I've looked at different genres, so obviously classical, popular music. I did
a popular music degree, so I've got sort of jazz influences as well.
So different composers, I've got sort of impressionist and jazz style, so I've got
Debussy, Einaudi sort of influences, and then more modern Jazz songs.
So it's kind of a combination.
That's why I enjoyed this so much because I could actually put my sort of, I don't
know my style on it and join them all together.
The last few years I've known what kind of music it is I'm trying to write, it's
a very specific thing I've been after.
It's called 'In Presence' because I like to try and create sort of timelessness and slow-moving
textures, you just gradually evolve to different places over time.
Eventually it takes you to a completely new place but very gradually and very subtly.
It's got 8 flutes and then about 10 string players and then its piano and pre-recorded
electronics.
It doesn't come across as sort of you hear any pulse or meter, you just have little fragments of
things that are sort of, make sort of a tapestry-like thing.
It creates this just sort of wash of texture and stuff like that so.
Mine's sort of similar in a way. I kind of
The aim is to take the audience on an audible journey.
So I begin with a soundscape.
Then it leads into a piano solo, then a string quartet is introduces, then a wind quartet
and the finale is a big band, well a big small band, so we've got the rhythm section
aswell, vocal, strings, piano everyone is involved.
As you'll see over the weekend, there's so many different styles and genres, we're
all so different aren't we.
