Cake "Anna Pavlova", a recipe for a delicious cake!

Today we will prepare one of the most popular desserts in the world - Anna Pavlova cake.
It will be a very airy, light, gentle cake with a snow-white meringue, a cloud of whipped cream and a scattering of fresh fruits and berries.
The cake has its own story, it is named after the great Russian ballerina, Anna Matveevna Pavlova.
At the beginning of the XX century, during a tour of Australia and New Zealand, on the day of her birth, a cake was invented, which the cook named as airy as Pavlova herself.
The classic recipe is meringue, cream, fruit, berries and vanilla, but to date there are several hundred varieties of this dessert.
I suggest together with me to prepare this cake, for which we will need:
• 5 proteins • 300 gr. Powdered sugar • 4 tsp. Starch
• Vanillin • lemon juice • 400 gr. Cream 33%
• 600 gr. Strawberries • 100 gr. Strawberry puree • 20 gr. Pistachios
First we'll prepare the merengue.
To do this, we separate the proteins from the yolks, we need to do this very carefully, so that the yolks do not get to the proteins.
Yolks in this recipe will not be needed.
Pour the proteins into the bowl of a mixer, add vanillin and a few drops of lemon juice.
On average, we start whipping the proteins.
There is a misconception that proteins must be very cold, it is not necessary,
The main thing is that the dishes in which they are whipped are absolutely dry and clean, without residues of moisture and fat,
I have proteins at room temperature.
Once the proteins are whipped to a dense air mass, add to the bowl in small portions at an interval of 20-30 seconds. Sifted powdered sugar and continue to whisk.
After we have introduced all the powdered sugar, increase the speed of the mixer and whisk the protein mass for another 4-5 minutes.
It should turn out such a dense glossy mass, which perfectly holds the shape.
We remove the mixer and add the corn starch to the bowl with the protein mass, if there is no corn, you can use the potato starch.
Carefully shovel the starch into the meringue.
Such a stable protein mass should be obtained.
For this cake we need 2 protein cakes to dry them I use parchment paper on which I outlined a circle with a diameter of 26 cm.
We turn the paper back and equalize the finished weight by 2 sheets.
Using a spatula or a knife, we distribute the protein mass inside the contoured circle.
The same procedure is repeated with the second cork.
We send the prepared baking sheets to a preheated oven to 140 ° C (284 ° F) and dry the cakes for an hour.
It is necessary to observe one condition - during the baking of the meringue, the oven door can not be opened, otherwise the meringue immediately settles.
After an hour, turn off the oven, open the door and in this position let the protein cakes cool.
After a while, when our cakes are practically cooled, we take them out of the oven.
And now we'll make strawberries.
At half of the total amount of strawberries I removed the tails, we will use it inside the cake as a berry layer.
We cut each strawberry along into 2 halves and add it to a separate plate.
The remaining strawberries will be used to decorate the cake, I did not remove the tails from her, but it's up to you.
We also cut it into 2 halves.
You can decorate a cake with any fruit and berries,
I also take fresh apricots, which I cut into thin slices and juicy ripe cherries, from which I did not remove the bones, so that she would not let the juice.
The berries are prepared, and now we'll skim the cream.
Pour them into the bowl of the mixer and whisk at medium revs.
To cream perfectly shaken, it is necessary to observe one condition - the cream itself and the dishes in which they will be whipped should be very cold!
I kept the cream in the fridge, and the bowl and corolla in the freezer.
Cream can be whipped in a natural form, and with the addition of a small amount of powdered sugar, I did not add powder because Meringue and strawberry are sweet.
Whisk the cream to a dense, firm consistency, watch them so that they do not get into the oil.
It took me 4 minutes.
That's how well the whipped cream!
All the ingredients are prepared, proceed to assemble the cake.
The dish on which we will serve a cake, lightly grease with whipped cream, this is done so that the cake does not move,
And lay on them the first protein cake, which is well cooled and therefore easily removed from the parchment paper and does not crumble.
On meringue spread half the whipped cream and carefully distribute them on the surface.
If the meringue remains warm, the cream will flow.
On the whipped cream, flatten the strawberries cut in half.
Further, if desired, pour the cake with strawberry puree, jam or syrup,
I have a thick strawberry jam, lightly melted it in a microwave and pour it on the strawberry layer.
Then put the second protein cake on the strawberry,
Slightly press it, spread the remaining whipped cream over the cake and slightly level it.
We proceed to the design of the cake.
Decorate it at your discretion, but the feature of this cake is a lush fruit and berry cap.
We put whole or cut fruits and berries on the whole surface of the cake or slide,
Decorate with sprigs of mint, sprinkle with powdered sugar and pistachios.

The advantage of this recipe is that the protein cakes can be baked in advance and leave them in the off oven,
And decorate with cream and berries the next day, just before serving.
