i am almost donee with my vegetable shopping.
Hi guys so i am just done with the shopping i prefer to eat locally grown vegetables,
and this is a store which sells locally grown vegetables . now lets go home and see how
to cook baingan ka bharta or its also called as khandeshi wangyache bharit in marathi.
Hi everyone welcome to my channel, my name is SWARDA and in todays video i am going to
show you all what i am going to eat in snacks and as early dinner; If you like this video

i first Pre-heated the oven at 400 degree f., rubbed a little oil on the Eggplants pricked
them , put it in a oven tray and cook for 30-45 min ; don't forget to change the sides
in between.
Once that is done, take Eggplant out, let it cool a little and then peel off the skin
(it will come off very easily). Cut cubes of the flesh , mash it properly
and keep aside.
This dish needs lots of garlic so I have finely chopped 5 big garlic cloves and grated 4 big
cloves. next ingredient is green chillies you can
take any no. of chillies according to your taste i am taking 6 of them,
half an onion because we are going to add lots of spring onion.
coriander or cilantro i have taken 1/2 a bunch and 2 bunches of spring onion, general proportion
is 1 bunch for 1 eggplant. For masala, I am going to add 1-2 teaspoons
of cumin seeds, almost a tablespoon of sliced dry coconut, 1 teaspoon carrot seeds or ajwain
,and 2tablespoon peanuts. Then i chopped onion green chillies ,cilantro
and spring onion.
Then add a bit of extra oil than regular; Heat the Oil in a non-stick pan on Medium-to-High
heat. After the Oil gets hot, add cumin, carrot seeds and peanuts after they turned golden
brown add green chillies, coconut, onion, chopped garlic, spring onion, and half of
the chopped coriander, in order, stir it well and let it cook.
I JUST GOOGLED MAHARASHTRIAN CUISIN AND IT SAYS Maharashtrianor Marathicuisine is the cuisine of
the Marathi peoplefrom the Indian state of Maharashtra. It has distinctive attributes, while sharing
much with other Indian cuisines. Traditionally, Maharashtrians have considered their food
to be more austere than others. And that is so true i really don't like
to mess up with authentic recipes and i hope i am doing it right.anyways,
Then add mashed eggplant , remaining coriander and grated garlic and salt in the end. Mix
it well and close the lid for a min or two. and your maharashtrian style baingan bharta
is ready. this tastes great with bajra roti .
Todays menu goes extremely well with the side of yogurt, onion and fried green chillies.
i absolutely love sweet corn thats why i keep on experimenting on corn, and todays snack
recipe is one of them. to make this baked in foil masala sweet corn on the cob i peeled
the sweet corn first and on the aluminium foil sheet lay the green part of sweet corn,
make sure that the foil piece should be big enough to cover entire corn. then i mixed
onion cilantro, mint leaves.lemon juice and salt, i had only butter knife handy so ignore
it. sprinkle the masala on the green part and cover the corn as shown. i kept corns
in oven at f 350 for 10-15 min, and let it cool down a bit for few min. then after unwrapping
with the baked masala i sprinted so fresh onion, cilantro ,salt and served it.
