Hi everyone
Today we are going
to start from a basic pound cake batter
And we are going to bake
5 mini pound cakes
with different flavors
Stay there we are just about to start
Mini Pound Cakes
Let's start with the basic batter
and for that we are going to need
150 gr of all purpose flour
100 gr of granulated sugar
2 eggs
100 gr softened butter
1 tsp baking powder
2 tbs honey and vanilla essence
In a bowl add the room temperature butter
and mix for a few seconds to soften it.
Then we can add the sugar and mix again.
The next step is to add the eggs,
one at a time
so It's easier to mix with the butter
and beat until fully incorporated.
It is best if we crack the eggs in a separate bowl
and then add them to the batter
that way, if we have a bad egg
it won't ruin the preparation
This is an extra step that only takes a second
but will guarantee the success of the recipe,
and you don't even have to use a clean bowl
I'm using the one I had the sugar on.
Once the eggs are mixed
add the honey and vanilla essence.
Finally, add the dry ingredients, sifted
and mix with a spatula, so you don't over mix.
This is the basic batter
is really tasty, and you can flavor it as you want
but not only you can make pound cakes
but also muffins or cupcakes.
Next, I'll show you some of my favourites combinations.
The things we are going to use are
frozen berries, pistachios, lemon,
dulce de leche, oreo cookies, chocolate chips,
orange and cocoa powder.
Since we are making mini pound cakes,
first we need to split the batter
batter in as many portions as flavors we want to make.
You can use an ice cream scoop
since It's gonna give you equal portions,
or use a scale.
For the first cake
add 1 tbs of chocolate chips
and 2 or 3 oreo cookies cut in quarters
and mix to incorporate.
The next one has lemon juice and zest
and 2 tbs of frozen berries.
Its really good, a little bit tart and really fresh.
This cake is the favourite at home,
I use the juice and zest of half an orange
It's really moist
For the berries and chocolate,
we use 2 tbs or frozen berries
and 1 tsp or cocoa powder.
You can also add chocolate chips or nuts.
Since we add cocoa,
the batter is going to thicken a little bit
but with a tbs or milk, liquor or coffee we fix this.
This next pound cake it's a little bit unusual
but I love it.
To the batter we are going to add
the juice and zest of half a lemon
and some pistachios
The pistachios not only are crunchy
but also a little bit salty
enhancing the other flavors
With all the batters ready
or almost ready
we are gonna put them in the mold.
I'm using a mini pound cake mold
really useful if you can find one
but you can also use disposable or silicone molds
or cupcake liners
or a regular pound cake mold and make just one batter
Even though I have a nonstick mold
I'm gonna spray it with oil,
or you could use melted butter,
and then I can add the different batters
For the last pound cake
in the mold add 2 tbs of batter
and then in the middle add a few spoons
of dulce de leche or caramel
and cover it with the remaining batter
This pound cake is super easy,
and if you cover the top with melted chocolate, its so good.
The last step before taking the pound cakes to the oven
is add any topping that needs baking.
As a example I'm adding
the same topping I used for the peach tart
to the berries pound cake.

Once everything is ready,
take the mold to the oven,
at 180ºC, for about 20 minutes
You can check if they are ready with a toothpick
As you can see,
this cakes are really easy to make
you can decorate them as you want
but I doubt they will last
long enough to try.
