Welcome to How To Cook That I am Ann Reardon and today we are making a GIANT Double Caramel

MAGNUM Ego ice cream!

The first thing we need to do is make the caramel so that it has time to cool down.

The caramel that is inside a Magnum, when you defrost it, it looks like this it's more

of a thickened custard texture than a caramel.

It doesn't taste very sweet it just has that sort of artificial caramel flavour to it.

Because ours is giant we want it to taste amazing so we are going to make an actual

caramel.

I've done some experiments with different quantities to get a consistency that is spreadable

at room temperature and not too hard when it's frozen because we need to be able to

cut into it and eat it.

It is not quite as dark a colour as the other one but we can just add some caramel colouring

to it to get it to the same colour.

So to make that what we need some glucose syrup, sugar, cream, milk, white chocolate

and more cream.

Tip the sugar and the milk ... and the first lot of cream into the saucepan with the glucose

syrup.

Add a candy thermometer and stir that over high heat.

job!

With the caramel, you want to heat that up to 116 degree C or 240F by which stage it

will be thick like this and starting to go brown.

Add in the second lot of cream and stir that well.

It will take a little while to get those to mix together but as the cream starts to heat

up they will combine quite easily.

Bring it back up to the boil then switch off the heat and add in the white chocolate.

Once it is melted use a whisk to distribute it evenly through the mixture.

Pour that hot caramel into a bowl, you can add colour here if you want it to be a deeper

colour and then leave that to cool.

Now you will need some sort of board to fit your icecream on and make sure it fits in

your freezer, really important.

And print out your template which you can also find on the website - now you can scale

this down if you need to if you've got a smaller freezer.

I've covered mine in plastic book covering because ice cream is obviously quite moist

and wet so paper is obviously not going to cut it.

Place some non-stick baking paper over the top of your template and pour on some melted

milk chocolate, spreading it out to the size of the template.

Now I am not bother to temper this chocolate because it is going to be frozen, it's not

going to be at room temperature so it doesn't matter.

Take a large tub of ice cream and place the thickness template over the top, it's showing

how thick our icecream needs to be.

Use a knife just to cut down the ice cream on both sides of the template so you get a

thick slice.

Once you have cut 2 of those, run the knife around the outside of your container to loosen

it so you can tip out your ice cream out.

Repeat that with a second tub of ice cream and place those pieces in a line on a tray.

Smooth out the top using a spatula so that it's nice and flat on the top of your icecream.

And then add the template on top.

Cut off the excess pieces from the top there and add them to the side to fill in any gaps.

At this stage the ice cream is quite soft so once you've shaped I want you to put it

back in the freezer and dial your freezer down to its coldest setting.

And let that go really firm.

Flip your chocolate over onto your base board.

Position it where you want your ice cream to be, making sure that you're leaving room

for the stick at the end.

And peel off the baking paper.

Add some spoons of that yummy caramel on top.

I like salted caramel more than normal caramel so I've actually added a little pinch of salt

to mine as well.

You don't have to do that, you can just leave it plain, it's up to you.

Spread that out so you get a thin layer covering your milk chocolate almost to the edge.

On top of that we need a second layer of chocolate because this ice cream has a double shell

of chocolate with the caramel in between.

For this inside shell I am just using ice magic so we can get it really, really thin.

To keep it cold while I am working I have set a tray of ice in the freezer, then I am

putting the baseboard over the top of that.

This is also a good idea when you are serving it to the table if you're not going to be

cutting it straight away, it'll just keep it nice and cold.

Grab your ice cream out of the freezer and line up the top and slide it off the tray

by pulling back that baking paper underneath the tray as you go so that it just guides

it off.

Then pour over a whole bottle of ice magic working quickly to spread that out on the

top.

And then add more to the sides as you go and spread it out.

Now at this stage the sides will look a bit messy but don't worry the outside will look

perfect.

We'll do that using a different method.

Place that back in the freezer for about an hour to firm up and then cover the outside

with a layer of the yummy salted caramel.

Once you've finished with this you're going to need to put it back in the freezer again.

Most ice cream shops have a big walk-in freezer that you can work in when you are doing this

sort of thing - but we of course don't have one so you just have to put it in the freezer

and take it out for short bursts and do the next step and then put it back in the freezer

to keep it firm the whole time.

I did think about making this out of cake and buttercream and fondant, which would have

of course been easier but if you're making something giant you want it to taste like

the real thing - not just look like it.

Let's make the handle out of white chocolate.

White chocolate is a little bit on the pale side so I'm going to add in a little bit of

cocoa powder to colour that and stir it through.

Put some baking paper over the template and pour the white chocolate over the top.

Now we need this fairly thick so don't worry if it goes over the lines, let it just flow

bigger than you need and we'll cut it to size in a minute.

Add in 2 cake support sticks making sure they are close enough together to be within the

narrow part of the handle.

Now I know that you might think you only need 1 here but if you only have 1 it's going to

flip and turn around, so we need 2 to hold it steady.

Add more chocolate on top of those sticks.

And then sprinkle it with a little more cocoa powder and spread it across the top to give

a wood grain look.

Once it is starting to set place the template over the top and and cut out that handle shape.

Then just use your knife to add some lines going down the handle so that it looks like

it's wood.

Once that is completely set, put your template over the ice cream and use it to position

the handle.

Then place it at the middle of the height of the ice cream and push it into place.

Doesn't that just look perfect, it looks like a wooden handle.

Now cut a strip of acetate the length of each side of the ice cream and cover that in milk

chocolate.

Lift up your strip and then wrap it around the side.

And if any has run out of the bottom, which will happen as you lift it up, just run your

spatula along the bottom of the acetate so it makes it easier to get it off later.

Repeat that on the other side and then pour the rest of the chocolate over the top of

the ice cream working quickly to spread it out.

Now, remember the ice cream underneath is freezing cold of course, so this chocolate

is going to set fast.

So you don't have much time to spread it out, just give it a few spreads, then leave it

because if you try to spread it while it's setting, it's going to look messy.

Take a knife and trim off any chocolate that has dripped down over the sides of the acetate.

And then, yes you guessed it, put it back in the freezer again for at least 30 minutes.

Once you've done that you can just peel off the acetate from around the sides.

And that gives you nice, straight neat sides.

To take a bite out of it I'm using a donut cutter.

Any large round cookie cutter would do, just soak it in some hot water first to make it

warm.

And would you look at that.

Yummm!

Looks so good.

A white chocolate handle, a double chocolate coat with caramel in between the layers and

that vanilla ice cream in the middle.

Episode 8 - The Making of Symbolica - Efteling - Duration: 6:40.

Efteling has a rich history concerning special attractions for all ages.

The last year and a half, an enthusiastic team worked hard...

...on the newest and largest covered family attraction: Symbolica.

On 1 July 2017, in the year Efteling celebrates its 65th anniversary, Symbolica opened its doors.

This is the final episode of the making-of: Symbolica!

And this is how it all started!

During the last months, we worked intensively together with the construction organisation to achieve all goals.

You will now see the transformation: other Efteling staff will start to make use of the attraction...

...and guests will also be admitted.

And that gives a peculiar feeling...

letting your 'child' go so other people can work with it too.

And for a while that gives you a sense of loss.

I have been involved with Symbolica for quite some time.

The project team translated the necessary procedures to qualifications...

which our colleagues working in Symbolica must obtain, and for which we have trained them.

This is to ensure that when we open everything goes as smoothly as possible.

We are really very proud, the construction went very well.

Getting the show together was hectic, but it was successful.

We, all of us together, managed to do it, and all of us are proud of that.

Ha, beautiful!

Together, we looked forward to this for so many years, and now it is 1 July 2017...

...and you see that so many people are already here...

...that really is the moment we all longed for.

I am expecting a very magical Efteling adventure.

From the Making Of, the first photographs, to the first pillar, I followed it all.

Go go go go go go go go!

I am totally out of breath!

What are you waiting for?

Symbolica of course!

I have seen all the videos and it really looks great, so I hope that it is even more beautiful in real life.

To finally enter it as one of the first is an extraordinary experience.

It has again been finished so beautifully in the style for which Efteling is renowned.

We are standing here feeling very, very proud.

ook, this is why we do it all, this is the most important moment.

From the moment we started the project, about 2.5 to 3 years ago...

...and now we are standing here to see how our guests will experience the attraction.

It is the 65th birthday of Efteling with 65 years of memories and the gift to our guests.

Five, four, three, two, one!

If you now look at what we started with, then you cannot do anything else but say...

...that you are incredibly proud of the fact that you've all worked on this together.

And when I say all, I mean a lot of people.

At least 250 people worked on this, from Efteling but also from outside Efteling.

All the suppliers, all the people who were involved...

...and who worked hard to make Symbolica into what it is.

We have created very high expectations, and you can't help but be swept up in the euphoria, like wow!

Isn't it fantastic what we have made!

All thanks to Henny Knoet who brought Pardoes to Efteling and to the world of Symbolica.

And that we are allowed to do this with Efteling, to give this to the visitors...

...that is how it feels for all of us, yes, it is fantastic.

Terrific! You really do want to queue for 5 hours for this.

I would immediately do it again.

You see little lights everywhere! You can't get your head around it, it is a giant illusion. It is terrific.

Magical, but that is what Efteling is.

At the end you could also press on all sorts of treasure chests and rings on the screen...

...and you then got other colours. And I thought that was neat.

What I hear most from the people who have been in the attraction, is that they are overwhelmed by the offer...

...by the amount and the opulence in the attraction.

And that they also have a lot of appreciation for the enormous amount of detail...

...which we added to the attraction.

I find it especially nice to see the guests standing in the middle of our dream.

And I hope that this dream lets people dream again about Efteling.

As in: What have I just experienced? What have I encountered?

And how fantastic that I can experience this, and how imaginative.

Yes, a fairytale, that is what I think is really important.

Great, so beautiful! So much to see, really. We should go two more times. Yes, fantastic!

I just stood at the exit hall, and when you see our guests come out of the attraction applauding...

...and they really congratulated me and thanked me, yes, then you see what such an attraction does for our guest.

Yes, that is really, really beautiful that you may be part of that.

We have really delivered in the decor.

In fact, we have built a fantasy world which is real, a real world that our guests can explore.

And that is what they experience.

This is my first time, I have goosebumps all over.

I think it is really great. When you enter there, it is so beautiful.

And what they said about you really have to visit multiple times to see everything...

...that is true. You really have to look around you, you have to look behind you, you have to look in front...

...above, everywhere, if you want to see everything.

Those moving figures, they move so smoothly! It is just so beautiful!

Yes, we certainly want to go again!

Now if you ask me, I have no idea what it has to do with actual wrestling but im sure

it has something to do with those wet dreams I was having.

Number 3: Eggnog Match Theres always a huge amount of guilt that

comes with jerking off on christmas eve but one might say that in December 2001, it was

morally justified.

Because this was the day of the very first eggnog match held in the WWE.

The two contenders were Stacy Keibler and Torrie Wilson.

Each donned in santas lil helper outfits, the two went at it in a pool filled completely

with eggnog, making christmas wishes come true worldwide.

Number 2: Dawn Marie and Torrie Wilson Make Out

Good ol` 2002, those were the days in the WWE where practically anything was allowed

on tv.

And a perfect example of that would have to be the much talked about hotel makeout scene

between Dawn Marie and Torrie Wilson.

With a scenario seeming straight outta your dads VHS porn stash, its no surprise this

moment made its way to number 2 on our list.

Number 1: Lita and Edge After Edge won the 2006 WWE Championship,

him and his girl Lita couldnt wait to go home and donkey fuck each others brains out- no

seriously, they literally couldnt wait.

So they had a bed setup in the middle of the ring and decided to have at it, in front of

thousands of people and show the kids in the audience how babies are made.

. So I guess you could say they were putting the raw, into monday night raw.

ESOcast 116: Success or Failure: How to Get Observing Time - Duration: 5:33.

Humanity looks upon the Universe with neverending curiosity and wonder.

With state-of-the-art telescopes like those at ESO,

we can take the most stunning images that the Universe beholds to us.

But to astronomers, ESO's telescopes are not just about a pretty picture;

they are tools to collect data, through which remarkable discoveries are made.

Observing time on each of ESO's telescopes is highly sought after.

Astronomers have to request to use this time by submitting proposals to the OPC.

The OPC stands for the Observing Programmes Committee, and essentially, it's a peer review panel.

It's consisting of referees that have been recruited from around the world

that have expertise in all the scientific areas that ESO caters for.

Every semester ESO receives of the order of 900 proposals,

submitted by a total of more or less 3500 distinct scientists all over the world

from, more or less, 50 countries,

and the acceptance rate of course is pretty low, because the competition is strong.

Typically, only 1 out of 4 proposals gets to see the telescope light.

It can be difficult to get time on our telescopes,

For instance, we have one new instrument that has been offered, called MUSE,

and that's one of the most heavily demanded instruments

that we have amongst our suite of instrumentation at the moment,

so it very much depends on how new it is, and how wide a community it's serving.

Twice a year, astronomers gather at the OPC to discuss the proposals.

In May 2017, they met for the 100th time, deciding the fate of thousands of astronomers:

whether or not they would be granted time on one of ESO's telescopes.

To mark this special occasion, they met in the beautiful Spineto Abbey in Italy.

The amount of time available on the telescope

compared to the amount of time requested by the observers...

there's a big difference, often a factor of five or thereabouts,

so there are tough decisions made all the time.

The most interesting part of my job, I would say, is the interaction with the OPC members,

these are very distinguished astronomers from all over the world,

so it gives us, and me in particular, a very international view on where astrophysics is going.

The thing you're really after is, is this really…

signs that it's going to make a large difference

to the way that we perceive this particular topic or sub topic.

The scientific ideas are sorted into four main themes, so the judges are equipped with the relevant expertise.

The first is the extragalactic — distance scales in cosmology;

then we have a second category which is for galaxy formation and evolution of galaxy dynamics;

the third one is star formation and planetary systems, including exoplanets;

and the fourth one is stellar evolution.

For each theme, there are six allocated experts

who discuss each proposal and grade them via a ranking system.

The referees read between 70 and 80 proposals each.

As the meeting progresses, the different panels eventually come to an agreement.

The fate of the astronomer has been sealed.

It's really clear the top one or two science projects that people put forward.

They really grab everyone's attention, it's really clear those are the ones that we want to do.

And then there are the ones that really don't capture our attention and those are clear.

But then there are lots of proposals in the middle that are all really really good science,

and it's really hard to choose between them

because all of them are making major steps forward in their science.

After the results have been collated and accepted by ESO's Director General, the astronomers are notified

and the successful ones prepare for the next stage: observation!

Most of the time the support scientists in the control room execute the observations

and send the data back to the astronomers, who may be anywhere in the world.

Months later, after much analysis and discussion,

the results are written up in the form of a paper, assessed in a peer review journal,

and eventually published.

There are also proposals which are so novel in their approach

that you have to really be careful that you are not losing something like a future Nobel Prize for instance.

expert he's not posted too many tips yet but he is showing signs of being a decent tipster

good let's see how good his tip is today and

it is in the match between Rafael Nadal and Karen Khachanov and there the

prediction is for that much to go over 30.5 games

so obviously Nadal will be the heavy favourite to win the match outright but

that Khachanov can hold his own a little bit and perhaps even sneak a set as well

which will then take the total games over and as I said in the intro Andy Murray

is in action today so our final tip is in his match against Fabio Fognini

we only had the one winner but so far this week we have had more winners than

ESOcast 116: Success or Failure: How to Get Observing Time - Duration: 5:33.

Humanity looks upon the Universe with neverending curiosity and wonder.

With state-of-the-art telescopes like those at ESO,

we can take the most stunning images that the Universe beholds to us.

But to astronomers, ESO's telescopes are not just about a pretty picture;

they are tools to collect data, through which remarkable discoveries are made.

Observing time on each of ESO's telescopes is highly sought after.

Astronomers have to request to use this time by submitting proposals to the OPC.

The OPC stands for the Observing Programmes Committee, and essentially, it's a peer review panel.

It's consisting of referees that have been recruited from around the world

that have expertise in all the scientific areas that ESO caters for.

Every semester ESO receives of the order of 900 proposals,

submitted by a total of more or less 3500 distinct scientists all over the world

from, more or less, 50 countries,

and the acceptance rate of course is pretty low, because the competition is strong.

Typically, only 1 out of 4 proposals gets to see the telescope light.

It can be difficult to get time on our telescopes,

For instance, we have one new instrument that has been offered, called MUSE,

and that's one of the most heavily demanded instruments

that we have amongst our suite of instrumentation at the moment,

so it very much depends on how new it is, and how wide a community it's serving.

Twice a year, astronomers gather at the OPC to discuss the proposals.

In May 2017, they met for the 100th time, deciding the fate of thousands of astronomers:

whether or not they would be granted time on one of ESO's telescopes.

To mark this special occasion, they met in the beautiful Spineto Abbey in Italy.

The amount of time available on the telescope

compared to the amount of time requested by the observers...

there's a big difference, often a factor of five or thereabouts,

so there are tough decisions made all the time.

The most interesting part of my job, I would say, is the interaction with the OPC members,

these are very distinguished astronomers from all over the world,

so it gives us, and me in particular, a very international view on where astrophysics is going.

The thing you're really after is, is this really…

signs that it's going to make a large difference

to the way that we perceive this particular topic or sub topic.

The scientific ideas are sorted into four main themes, so the judges are equipped with the relevant expertise.

The first is the extragalactic — distance scales in cosmology;

then we have a second category which is for galaxy formation and evolution of galaxy dynamics;

the third one is star formation and planetary systems, including exoplanets;

and the fourth one is stellar evolution.

For each theme, there are six allocated experts

who discuss each proposal and grade them via a ranking system.

The referees read between 70 and 80 proposals each.

As the meeting progresses, the different panels eventually come to an agreement.

The fate of the astronomer has been sealed.

It's really clear the top one or two science projects that people put forward.

They really grab everyone's attention, it's really clear those are the ones that we want to do.

And then there are the ones that really don't capture our attention and those are clear.

But then there are lots of proposals in the middle that are all really really good science,

and it's really hard to choose between them

because all of them are making major steps forward in their science.

After the results have been collated and accepted by ESO's Director General, the astronomers are notified

and the successful ones prepare for the next stage: observation!

Most of the time the support scientists in the control room execute the observations

and send the data back to the astronomers, who may be anywhere in the world.

Months later, after much analysis and discussion,

the results are written up in the form of a paper, assessed in a peer review journal,

and eventually published.

There are also proposals which are so novel in their approach

that you have to really be careful that you are not losing something like a future Nobel Prize for instance.

This one is my 'fully'...

...but I also ride with the hardtail.

I change a lot between the two...

...it's fifty-fifty.

When it's really bumpy and there's much downhill on the track...

...I choose the Fourstroke.

When it's a fast one...

...without bumpy descents...

...and with steep climbs where you have to push all the time...

...and sprinting out of the corners...

...I take the hardtail.

One chainring in the front.

I'm always racing with the 34T chainring.

In the races I only ride with one chainring in the front...

...because it's lighter...

...and I don't need the wider range...

...of a double setup.

But in training...

...when you go on fast downhills and ride on the street...

...it's good to have a bigger gear.

It's very smooth to shift.

You only have to click a little bit...

...and it shifts very well.

The shifting is every time the same.

I'm very happy with these brakes.

For me the modulation is important.

When I go into a corner I can push a little bit...

...and I have the control that it's not braking full.

But when I want to brake full gas...

...it's also braking full gas.

That's important.

The pedals are also Shimano XTR.

I really like that you are fixed in the pedal and that you have no play.

This was my bike.
