potatoes 500g (3cm cubes)
potato skin adds flavour; leave it on soak potatoes in water and scrub clean before using
green chillies 3g
ginger 12g
a pinch of salt
crush to a paste
boiled motor 25g (soaked overnight and boiled)
dried red chillies 2 pcs
panch phoron 1 tsp
hing (asafoetida) ¼ tsp
kasuri methi ¼ tsp
sugar 5g
salt 5g
beetnoon 5g (black salt)
make the moshla mix
you can store it in an airtight jar and use in alu'r torkari for roll, kochuri, moghlai, or shingara
alu'r torkari moshla mix: cumin powder 4g
coriander powder 5g
turmeric 4g
red chilli powder 3g
aamchur powder 2g (dried-mango powder)
gorom moshla 2g
chaat masala* 6g
for this recipe, we need just 5g of the moshla mix
heat 20g mustard oil until it smokes gently and changes colour to a pale yellow
dried red chillies
hing: fry 10 secs
panch phoron: wait until methi (fenugreek) in it turns red
ginger and green chilli paste
fry on low heat for 30 secs
5g moshla mix
½ tsp kashmiri red chilli
5g sugar
frying chilli powder and sugar directly in oil leads to a rich red colour
fry spices on low heat for 30 secs
be careful not to burn them
potatoes
if making a huge batch, you can also boil potatoes separately before adding them to the pan
salt
sauté with spices on medium heat (6 mins)
crush kasuri methi
black salt
300g hot water
boil until potatoes are cooked (10 mins)
potato starch should thicken the gravy
if it hasn't thickened, mash in a couple of potatoes
