Steamed ginger pudding with tea-infused custard
start by greasing your pudding dish with butter
you can use a pudding basin, or a deep, thick ceramic bowl
baking paper
plain flour 120g
baking soda ½ tsp; baking powder ½ tsp
salt ¼ tsp
sift
lemon zest 2 tsp
(if you can't find lemon, you can also use lime)
grated carrots 100g
the base for our pudding is the steamed carrot pudding recipe from Patricia Brown's 'Anglo-Indian Food and Customs'
as this is a ginger pudding, we're adding ginger in two forms
candied ginger 100g, 5mm pieces
ginger paste 50g
be sure to grind ginger fresh for this pudding! (1 part ginger + 2 parts water)
salted butter 115g, softened
cream butter until pale and airy
brown sugar 175g
cream again until pale
3 eggs, whisk in one at a time
lemon zest 2 tsp; gorom moshla ¼ tsp
ginger paste 50g
juice of a large lemon, ~20g
put the whisk away
dry ingredients, grated carrots
candied ginger
fold in using a spatula: don't overmix
level
to cover the dish: tin foil
baking paper
fold to form a 2cm pleat: this will provide room for the pudding to expand
grease with butter
secure with a twine fix it below the lip of the bowl
create a sling to easily lift the dish out of the hot-water bath
place a stand you can also use a saucer or an upturned bowl
hot water
water should reach half the height of the dish
steam on medium-low heat for 1 hour, 45 minutes
make sure the water never runs dry; refill if necessary
this is a crème anglaise infused with tea
this custard is inspired by a dessert served at Cochrane Place, Kurseong
milk 150g
cardamom 1 pc; sliced ginger 5g
tea 10g
brew until you get a rich, dark colour: ~3 to 4 mins
strain and cool
in a clean saucepan...
3 egg yolks; 50g sugar
¼ tsp salt
whisk for 2 mins until pale yellow: this tempers the egg yolks
250g heavy cream: should not be hot or egg will scramble
cooled tea
combine, but don't incorporate too much air
now transfer to low heat
stir continuously on low heat: as temperature gradually rises, egg yolks will cook, thickening the custard
strain
cover immediately with cling film to prevent skin forming on the custard
refrigerate: custard will thicken further while it chills
cool pudding in the dish for 2 hours
flambé
heat ¼ cup brandy
the alcohol will burn, leaving behind a rich flavour
chilled and thickened custard!
